Lazy Chili Beans

by Nan

Who has time to make chili beans from scratch when there's drinking to be done? This recipe sure came in handy when I passed out and woke up with 30 minutes to prepare dinner.

2 large cans of pinto beans (the short squatty one--I think it's about 24 ounces)
2 packages taco seasoning mix
1 jar salsa, 16 oz.---you pick the heat factor
2 lbs. lean ground beef

Brown beef, drain, and add taco seasoning mix.
Stir that around, then add the salsa and beans. Voila...you're finished.
If you're feeling energetic, make a pan of cornbread and fry a skillet of potatoes.
It's a meal fit for a redneck king ( I know because I'm married to one).

The next day, you can pour some Fritos on a plate, heat the beans and ladle over them, add some shredded cheese (I bought pre-shredded when I was drinking, but I actually shred my own now) some chopped onion, and you have a Frito Boat....another kwikkie meal.
